Sans gluten sil vous plais! A gluten free adventure to France.

Bonjour, mon petit amies!
Just returned from an awesome short summer vacation to France.
Me and mr bake n' beebz packed up the muffin mobile, harry drove all the way, we took the ferry across the channel to Calais and drove on down south along the coast to the idilic seaside town Trouville -sur - mer. I brought genius gf bread with me so we pulled off roadside and had delicious filling French cheese and ham sammies before driving off....
Jeeeeez the drive was stressful, nearly ran out of petrol and both front tires were flat in the middle of the vast hot auto barns I probably knocked years off my life with navigating us, managed to miss every turn off we needed to take. So seeing the sea and our hotel was a welcome sight.
Trouville-sur-mer was bustling and and weather was perfect, and hawt. managed to get a truckers arm during the journey. We headed to the sandy beach. As we strolled along the wooden boardwalk we ate ice cream, drank desperadoes and melted away any of those travelling stresses.




We meandered along the strip of neon lights and candle lit quaint bistro bars and restaurants ,in the evening, soaking up all of our vibrant surroundings around us, I dominated a bucket of moules marinere, mr bake n Beebz owned a pizza. Now eating gluten free is pretty tricky, dispute loading up my noggin with the new scary phrases in Francais, the waiter still brought out my dinner aside a whole buttery baguette.

On our second day we played in the pool, bathed and went boarding! Skim boarding was super fun. It's awesome as I found it a hell of a lot easier than surfing but even riding along the tiniest wave felt gnarly. Plus it's a serious workout for the Glutes.
To celebrate a afternoon out on the waves, whole lotta gelatto, for our post work out fuel... nutella, banana and kinder bueno flavours were to die for. back at the hotel we chilled with more beers and wine followed by more booze and a delicious restaurant dinner. sans gluten salad for me.



on our third day we headed back north east and drove a few hours to Paris, checked into our very very minimal lodgings and then headed for the city centre for sightseeing and dinner.







Navigating the metro was a nightmare as there we construction works, lines closed and no information about it. But the eiffel tower was big and the food was delicious, despite more sans gluten mix ups, our restaurant was in the eiffel tower's shadows and overlooked the river Seine. We decided to leave early to avoid any major train stress, but I definitely want to go back and explore the city and it's shops further! I didn't even get to try a authentically French macaroon!

This lil adventure was just what I needed. I had the best time with my best buddy... I felt besotted with harry our whole holiday, we laughed and had so much fun. I already have post holiday blues waaaaaah. This is my first holiday to a foreign country since being diagnosed coeliac, it's was tricky with the language barrier, I felt a bit of panic in restaurants... So most of our meals were packed lunches made in the hotel rooms, which saved a wholeloada monies too. Being surrounding by cheeses, cured hams and delicious seafood was amazing and we definitely made the most of the local French fresh produce. Most of the super marches carried 'bio' foods, which means organic and in these sections were normally gluten free rice cakes, musili and some breads.

Cherry coconut Vanilla (protein packed) cake! Gluten Free.




I wonder if Arnold swazenegger ate cake as a post workout meal in his hey day? Meh, well I do. Protein pudding is necessary for my all my hard efforts pumping these pewnies at the gym...they need pudding, I always need pudding. Not just my sweet tooth satisfied but my gunzzzzz are gonna be flexin' and totes happy too. This cake is flourless and fat free, instead it's made from yoghurt and whey powder! Weeeeey hey.


I was flogged a crate load of cherries from the market for £1 yesterday...it was the end of the day and the stall holder just wanted to go home. Soooo many berries! After eating enough to make my stomach ache ( at a guess ....my weight in chezzas) I though I'd do what I always think of doing. Bake.


Cherry coconut vanilla cake
Ingredients

4 scoops vanilla protein powder
1 scoop coconut flour
1 tsp baking powder
1 cup Splenda
1mashed banana
150g vanilla fat free yogurt
1 Tsp vanilla essence
1 egg
1 cup de stoned fresh cherries


Pre heat oven to 180*C
In a bowl with a and blender, mashed and combine banana and yogurt.
Add the vanilla Essenes and egg and blend further until air bubbles form.
Stir in cherries
Fold in vanilla whey powder, coconut flour and baking powder. Once completely and carefully combined pour mixture into tin and bake for 40 mins.
Once cooled drizzle with cinnamon icing.


I bet Arnie baked and ate like 10 of these cakes a day... I best try to follow the terminators training nutrition too.

Chocolate banana peanut butter cup cake! Gluten Free...

Just look at that title, Go on re-read if you have to, ticks those foodie favourite boxes....Ummmm and Now look at this picture...


Everybody knows theres nothing much more spectacular in life than the combination of chocolate and peanut butter.





A match made in sweet salty n' heaven. Not content with just nibbling on a pb cup, there's no doubt these are awesome... But sometimes i just need cake... Fudgey chocolate cake with thick frosting to sink your teeth into...and this is a that.


Peanut butter frosting in the centre of a chcoolate chip cake with topped with a melty drizzley chocolate icing.... Oh geeez Sweet tooth is in ohhhhver drive.


Ingredients
1 box of chocolate cake / muffin mix
1 large banana
1 egg white

1/2 cup peanut butter
1/2 cup icing sugar

1 tbsp Chocolate powder
1/2 cup icing sugar.
2 tbsp warm water

Pre heat oven to 180*C
Blend together banana and egg white until smooth
Pour in dry chocolate chip muffin mix and carefully combine.
Pour in to greased and lined cake tin and bake for 30 minutes.
Remove from oven and allow to cool on rack.

For peanut butter frosting... Melt PB in microwave for 30 seconds and remove, then stir in sugar. Cut cooled cake in half and spread mixture over one half, replace top.

And whisk together icing ingredients, drizzle over cake. Then slice up and serve!

Healthy gluten free French toast!




Good mornin', good mornin, I've dreamt of breakfast the whole night through,
Good mornin', good mornin' sweet tooth.


I recently made the ultimate discovery... A loaf of bread that tastes like a REAL loaf of bread. This is a euphoric moment in a gluten free gals life... Its 15 months since a wheaty slice has crossed these lips so now that ive finally found a suitible replacement im gonna enjoy it....

...By consuming bread for every meal and snack until I burst from squidgy soft and crusty crust carb heaven. Breakfast is served....


Healthy Gluten free French toast...

Ingredients
  • 2 slices of bread (white, brown or gf)


  • 1 egg white


  • 1/4 cup of almond milk


  • 1teaspoon sweetener


  • 1/2 teaspoon cinnamon



  • In a bowl whisk together egg white, milk, sweetener and cinnamon.


  • Dip one slice at a time into bowl, ensuring the bread has soaked up plenty of liquid.


  • Heat a pan on a medium heat and spray with a low cal oil spray.


  • Place slices into pan and cook until sides are browning, flip over and cook for a further few minutes.


    Serve with fresh fruit an sample syrup for a super indulgently healthy breakfast.

    Hey you...


     Yeah you, How you doing? have a sit down , pop ya feet up and lets have a good l catch up ma dear.
    I have been throughly enjoyed 2 weeks off from school. SPRING BREAKKK YEAAAAAH.  im now back to reality and back in the classroom teaching some lil nuggets some maths and important worldy stuff. but id just thought id share some instgrammy pics of whats been going on up in here...


    I done some partying. got a bit boozey.


    ate some questionable BBQ meat

    aaaaand suffered with self inflicted painful hangovers the next day.

    Once fully recovered I packed my bags and ventured down south to the coast.


    Visited ma ol best mates and brought them an offering of lemonade cupcakes.

    we shopped and strolled along the sea front.
