Gluten Free butterscotch & white chocolate chip peanut butter cookies

I baked this batch of chew chewieeee delicious healthy cookies the other day, after a week of putting this post on the back burner... these pictures are bringin' back sweet, sweet tooth memories and i'm craving them like a mad woman. A spin on the original choc chip version and the the was the ginger nut... now in the trilogy, of the epic saga that is my cookie recipes I bring you... Butterscotch & white chocolate peanut butter cookies.
Like always these are perfect dunked in to a cold glass full o milk. its hard to believe, ya'll think im saying but they are these are low cal and gluten free... they ain't the prettiest, I agree, but they are so damn tasty... and that what really matters, guys.
 Ingredients
  • 1/2 cup oat flour (ground rolled oats!)
  • 1/4 cup peanut flour
  • 1/8 tsp salt
  • 1/4 tsp bicarb of soda (not baking powder)
  • 1 tsp vanilla essence
  • 2T white chocolate chips, depending on your preference
  • 3 butterscotch hard candies smashed or broken into pieces
  • 2T brown sugar
  • 1/4 cup granulated sweetner
  • 1T peanut butter or pre-melted margarine
  • 1T plus 2tsp nondairy milk (feel free to switch proportions of milk and oil) (25g)
Preheat the oven to 375 degrees. Mix your dry ingredients, then add in wet. Form cookies into discs using your palms on a baking sheet, and bake 6-8 minutes. Take out when still underdone–they’ll continue to cook while cooling, taking them out early this way, means they remain chewy!

Ginger nut & dark chocolate chip cookies (GF + vegan)


My latest obsession is ginger, i have been throwing candid chunks and ground spice in everything, the firery kick seems to suit all that i know and love, like chocolate and dark chocolate and nuts ermmm and chocolate.oh  Im also reeeeally enjoying slavering peanut butter and ginger preserve all over my toast... its a pretty tight combo...
...Im just filling this post with jibber jabber, My minds gone blank, because i'm eating this very cookie as i type, and its too darn good, its turning my noggin into a chocolatey chewy mush and making it tricky to think/write about things right now. so ill post a picture of bobbin to compensate for lack of reading material...
Aaaaaanyway i digress, whilst i pull myself together, here us my recipe for my healthy chocolate chip cookie but with a ginger edition... There too good to be true a chewy, crisp chocolatey cookie with a delightful warming spice hint..oh and 40 calories per cookie... Enjoy! I most certainly am.
Healthy Ginger nut & choc chip cookie!
 makes 10-12 cookies
  • 1/2 cup oat flour (ground rolled oats!)

  • 1/8 tsp salt
  • 1/4 tsp bicarb of soda (not baking powder)
  • 1 tsp ground ginger spice
  • 2T to 1/3 cup chocolate chips, depending on your preference
  • 2 tsp candid ginger pieces
  • 2T brown sugar
  • 2tsp sweetner or more depending on your sweet tooth.
  • 1/2 tsp vanilla extract
  • 1T coconut oil or pre-melted margarine
  • 1T plus 2tsp nondairy milk (feel free to switch proportions of milk and oil) (25g)

Under the weather in glorious weather...

 I'm feeling totally run down this weekend, got home from work at 7.30 on friday and fell into a much needed deep coma til 9.30 Saturday morning... I HAD MY FIRST EVER DRIVING LESSON AT 9.45!  my provisional arrived only the other day but I was quick off the mark and got booked in.
Quickly threw a Vitamin C tablet into a glass and chugged it down to boost the old immune system
 Driving outfit...
 cute primark dress, it has foxes printed all over it, it has a peter pan collar and it was 6 pounds... lubbly. I NEED TO CLEAN THAT MIRROR...
note: i have 15 minutes to get ready but I still manage to find my camera and take photos... yup I have my priorites in order.

My driving lesson went swimmingly, got in a pickle learning what all those gears/ clutch/ brake thingys do at first, but after a while I was enjoying my drive and picking things up really quickly... it was all going so well... until i spotted too unbelievably adorable Shih Tzu pups... lost concentration crashed into a curb, stalled and created a mini traffic jam. Nerves a bit frayed, I straighten my self out, and looked out the window in time for a heckler to shout out a profanity about learner drivers... oh well back on the road next weekend... for hill starts... watch out.


Got home and although driving was actually pretty fun and exhillerating, I felt atrocious and collapsed on my couch for pretty much the rest of the day. oh Apart from going to the kitchen to bake these blueberry and chocolate chip cookies (blueberries and chocolate are both good for the immune system riiiiight)
 and those cheese and spinach waffles...

Today I don't feel much better in fact maybe worse,  but decided to get out in the beautiful sunshine with Beebz. sucks feeling under the weather in beautiful weather!
whilst on out walk i picked up some pick me ups!
 
new icing nozzle, cake decorations and cupcake box... and the cashier threw in some complementary truffles... nibble nibble. yum.
and picked up 3 punnets of reduced strawberries... nearly worked my way through 2 boxes whilst typing....

ARTY TEA PARTY.

The Royal wedding is tomorrow! I am surprisingly really excited. I don't know if its all the build up or because I have a 'big fat royal gypsy wedding' fancy dress party to attend, but I'm already getting in the spirit of things. I'm planing to have a small tea party for one whist watching Wills and Kate tie the knot on my small (big 42") screen.
Painted up an old chipped tea pot with the Union Jack, to accompany my planned patriotic cake and tea overindulgence. This obviously was far too much hard work so I whipped up a mini batch of some chocolate chip cookies.
Using this recipe by chocolate covered katie a chewy low fat cookie was made... 

World’s Healthiest Chocolate-Chip Cookies? 

“Not Guilty” Chocolate-Chip Cookies 

(makes 9-15 cookies)


  • 1/3 cup plus 1/4 cup flour (I used 70g whole-grain spelt. You can use all-purpose.)
  • 1/8 tsp salt
  • 1/4 tsp baking soda (not baking powder)
  • 2T to 1/3 cup chocolate chips, depending on your preference
  • 2T brown sugar (do not omit or sub with white) (20g)
  • 1T plus 2tsp white sugar (If you have no sweet tooth, like me, you can omit) (21g)
  • 1/2 tsp vanilla extract
  • 1T vegetable oil (or pre-melted margarine) (12g)
  • 1T plus 2tsp nondairy milk (feel free to switch proportions of milk and oil) (25g)
Preheat the oven to 375 degrees. Mix your dry ingredients, then add in wet. Form cookies and bake 6-8 minutes. Take out when still underdone–they’ll continue to cook while cooling, and so you don’t want them to get hard.

I have decided I'm going to attempt to find the perfect chocolate chip cookie recipe, whilst these were nice, ticked the taste and chewy craving boxes, I found the dough was a little dry (I had to add some water) and they didn't really spread whilst baking. I have high standards and I demand several factors from a cookie... I want sweet, chewy centre, crunchy edges, well melted choc chips and a dough that spreads well. So here at Bake n' Beebz I am going to en devour to find THE perfect healthy(ish) cookie recipe... over the next few weeks i will be searching high and low and will report my findings...

This is how the cookie crumbles!

I've had a pretty good day today. had a leisurely walk with beebz along the sea front into town, did some knitting and a ole lotta baking.
Started off with the cheesey bread then i moved on to...
Phase two of baking saturday... dog biscuits. They are bone shaped this time using this recipe
 Phase three ... Human biscuits...well cookies. these low calories healthy bites are more cakey and crumbley rather than chewy, but non the less very moreish and will nicely satisfy a cookie craving.


 Chocolate chip applesauce cookie.
I adapted this recipe i found by 'tastes better with friends' and cut down the quantities, because i don't need 36 cookies (well i do).
  • 1/4 cup of brown sugar
  • 1/4 cup of applesauce
  • 1 tsp. of baking soda
  • 2/3 cup of flour
  • 1/2 tsp. of salt
  • 1/2 cup of raisins/chopped ginger/choc chips
  • vanilla extract
  1. Preheat oven to 375F or 180 degrees C
  2. Cream sugar and applesauce. add in egg white and vanilla extract and whisk further.
  3. Sift flour with baking soda and salt .
  4. Add sifted ingredients to applesauce mixture and stir until smooth.
  5. Add your combo of mix ins, i added chopped crystalized ginger, chocolate chips and raisins.
  6. Drop by teaspoonfuls onto greased baking sheet, spacing the cookies 1 to 2 inches apart.
  7. Bake about 12 minutes or until lightly browned. 
Makes 11 cookies at 66 calories each.
  NOW EAT! whilst the chocolate is still ooey gooey.
Gonna dip and slurp mine with a glass of milk, whilst looking out at this view!
