Frosted Jam Donut Cupcakes (Gluten Free and low in fat!)

Is it Doughnut or donut?
doooo nut or doughy sugary heaven fried nut? meh.
you say tomato and i say tomato...

What was supposed to be just an ordinary innocent vanilla cupcake... became so much more...

It looks like a fancy cupcake (due to over generous frosting sprinkles) but when you bite into it, it tastes like a delicious naughty jammy doughnut, only it has next to none of those bad fats.... aaaand its gluten free. its magic, I swear.
If the police force got a whiff of this donut goings on, and spied this recipe, They'd get their s.w.o.t team  in on the double to swoop in on this batch of healthified doughnut cakey goods. They taste so good it should be criminal. So arrest me, but don't confiscate my baked goods. please. any thing but that.
I burrowed in to the sponge, filled up each cake with jam and popped their hats back on...

GULTEN FREE + VEGAN CHOCOLOATE CUPCAKES

I whipped up some special cupcakes for a special occasion! These Anniversary Cupcakes tasted rich and decadent but aren't too naughty for the waistline... oh and there vegan aaaaaand Gluten Free. Its a miracle.
I did a little experimenting first....lab coat on and electric whisk plugged in. For my first recipe trial, I used chickpea gram flour and adapted a Babycakes recipe. For the second batch  I used only rice flour. The Babycakes recipe was very fudgey, I could just taste gram flour and didn't rise too well but...
After extensive taste tasting I was pleasantly surprised with how successful my rice flour cakes had turned out. they rose a treat, had a bouncy, spongy crumb and weren't too over overpoweringly chocolaty. WE HAVE A WINNER.

HAPPY ANNIVERSARY.

Judging by this text I received yesterday, we were defiantly made for each other...
Yup Its mine and Mr bake n beebz' Anniversary today. I was 16 when we met and boy has time flown by!
LOVE YOU HARRY!
We spent this sweltering summer's afternoon strolling around the lake and park with Bobbin, The weather was stunning and the park was packed!  After we walked up to town and treated ourselves to a slap up meal to celebrate.

We dined at Wagamamas, one of our favourites, specializing in tasty simple Japanese food. They also go out of their way to cater for all allergies and help you select a meal.

I chose the Saien Soba - noodles in a vegetable soup topped with fried tofu, beansprouts, courgettes, asparagus, red onion, leeks, mushrooms, mangetout and garlic. garnished with spring onio. They used rice noodles instead of wheat and substitued the miso soup for a gluten friendly base.

We have been to Wagamamas many times and I wanted to try something I don't normally get and although i love the way they are so brilliant at adapting, this was a little lacking in flavour, but I still happily slurped it up! (It made me miss the days when I woulda ordered whatever the heck I liked.)

Harry went for his favourite... chilli ramen and polished it off.
Harrys bowl had noodles in a spicy chicken and pork soup topped with your choice of chicken or beef sirloin, beansprouts, red and spring onions and chillies. garnished with coriander and lime.
Bobbin waited patiently under the table for her noodle scraps ;) I have no shame.
(oh and shes had a haircut... she came into my salon to have a her hacked off this morning.)
Whilst in town we did a little shopping and I had to buy the cupcake version of the muffin dog toy....
she had trouble deciding which to chew on for dessert...
In the end she wanted cake.
Whilst us humans had real cupcakes...
I baked some special anniversary GF chocolate cupcakes. These were lovely, decadent and fudgey...going into for my second and about to slip into chocolate coma.

Recipe to come!

Fluff Stuff

I have fluff in my possession...
On a shopping trip to Brighton, on Saturday I wondered into, the American candy store, Cyber candy, and discovered they now stock fluff! They must have heard my pleads. This stuff is all i ever dreamed of and more. As soon as I leapt onto train home, found my seat, relatively safe out of the judging public eye, I scooped my paw in and gobbled up a couple of handfuls. Then i suddendly remembered i had also bought some gluten free chocolate animal crackers... so they got a good dunkin' oh it was the BEST TRAIN COMMUTE EVAAAAAH. Its so sweet, even for my sweet tooth, my mouth kinda ached afterwards, It is after all a massive marshmallow poured into a glass jar...but its worth it.
On Sunday I baked some GF chocolate cupcakes for me and some friends i was meeting at the beach. I topped them with mallow fluff and sprinkles. That fluff had a mind of its own and kept dripping every where, messy but worth the rediculously stick fingers. I think this could be a new enduring love affair....
next stop fluffer nutter sam michs here i come...

have you ever had marshmallow in a jar? whats your stance on teh fluff? like, love or hate?
Right back to packing up my appartment... Big move tomorrow...

In the afternoon Mr. Bake n Beebz whisked me to the park for a surprise outing...
Boating on Stanbrough lakes! It was a beautiful warm summer's day and i had so much fun, couldn't get the knack of that rowing, though, the only place we were going was round in circles, so left all that hard work to harry and sat back, enjoyed the view and splashin' the duckies. After, we walked beebz and ate, perfect day.

Chocolate Coma

 Going
 Going
Gone.
Had to pack Harry off with the remaining slices... To get this dangerous cake away from me, and out of my house.
Fajita spiced chicken, baby spinach, dollop of sour cram and chive,  toms and peppers.
A salad to balance everything out...
